  • I used the packaged bamboo shoots, so I simply rinsed them and set them aside. (If you use fresh bamboo shoots, peel off the tough outer layers and slice them into bite-sized pieces. Soak them in cold water for an hour to remove the bitter taste. You may also want to blanch the bamboo shoots until they are tender. Drain and set aside. )
  • Gradually whisk light soy sauce, dark soy sauce, brown sugar, and water together until combined.
  • In a large skillet, heat cooking oil over medium-high heat. Add the minced garlic and stir fry until fragrant.
  • Add the bamboo shoots in and continue to stir fry.
  • Pour in the premade sauce. Cover the pot and let the ingredients simmer over medium heat for about 5 minutes. This will allow the flavors to meld together and the bamboo shoots to absorb the rich braising liquid.
  • Garnish with chopped green onions. Serve and enjoy!
