Start by cutting the chicken breast into small, bite-sized pieces/cubes.
Season the chicken cubes with salt and pepper. In a large bowl, toss the chicken cubes with egg, cornstarch, rice flour, and Shaoxing wine, making sure each piece is well coated.
Next, it's time to make the sweet and sour sauce. In another mixing bowl, combine ketchup, sugar, rice vinegar, water, cornstarch, and light soy sauce. Mix well until all the ingredients are fully incorporated and there are no lumps of corn starch remaining.
Preheat your air fryer to 370°F and brush oil on the air fryer basket to prevent sticking.
Place the additional cornstarch in a shallow bowl. Dip the marinated chicken pieces with cornstarch, then arrange them in air fryer. Place the coated chicken pieces in a single layer in the air fryer basket, leaving some space between each piece.
Air fry for 7 minutes, flipping the chicken halfway through and giving it a good shake. Then air frying another 5-6 minutes or until the chicken is golden brown. Transfer it to a plate.
Heat the pre-mixed sauce over medium heat in a small saucepan, stirring constantly until the sauce thickens.
Drizzle the sweet and sour sauce over the fried chicken.
