  • Prepare the simple marinade: In a small bowl, combine the oyster sauce, light soy sauce, slurry (mix cornstarch with water), Shaoxing cooking wine, salt, and black pepper. Mix well until everything is dissolved.
  • Marinate the pork chops: Place the pork chops in a large bowl or airtight container. Pour the marinade over them, ensuring they are well-coated. Cover with plastic wrap and refrigerate for at least 30 minutes or 2 hours for more intense flavor.
  • Cook the pork chops: Heat cooking oil in a cast iron skillet over medium high heat. Remove the pork chops from the marinade, allowing excess marinade to drip off. Place the pork chops in the hot pan. Cook the pork chops for about 5-6 minutes on each side until golden brown or until they reach an internal temperature of 145°F (63°C) on an instant-read thermometer for medium-rare or longer if you prefer them more well-done. Use tongs to flip the chops and ensure even cooking. (Decrease the cooking time if you are using thinner pork chops.)
  • Let the pork chops rest: Once cooked, remove them from the skillet and place them on a cutting board. Cover loosely with foil and rest for 5 minutes to allow the juices to redistribute. This will make the pork chops more tender and flavorful.
  • Garnish and serve: Sprinkle the cooked pork chops with sesame seeds and chopped green onions. For a complete full meal, serve with steamed rice or fried rice and a side of your favorite vegetable.
