Cook Until Slightly Thickened: Place the saucepan over medium heat and cook the mixture gently, stirring frequently to prevent sticking. After about 8–10 minutes, the mixture should thicken slightly, becoming silky and smooth.
Cool the Mixture: Remove the saucepan from the heat. Cover the surface directly with plastic wrap to prevent a skin from forming while it cools. Let the mixture rest for a few minutes.
Blend the Strawberry Filling: Add the chopped strawberries, cooled coconut mixture, lime juice, and lime zest to a blender. Blend until smooth and creamy. Give it a quick taste and adjust the lime juice or zest if you’d like a brighter citrus flavor.
Fill the Popsicle Molds: Carefully pour the strawberry mixture into your popsicle molds. Gently tap the molds on the counter a few times to release any trapped air bubbles.
