Ingredients

  • 3 cups day-old cold white rice
  • 1 can (12oz) Spam diced
  • 2 tablespoons vegetable oil
  • ½ sweet onion finely diced
  • 1 cup frozen mixed vegetables peas, carrots, corns, green beans,or bell peppers
  • 2 large eggs
  • 1 tablespoon oyster sauce
  • ½ tablespoon light soy sauce
  • 1 teaspoon sugar
  • 2 teaspoons sesame oil
  • salt to taste
  • black pepper to taste

Instructions

  • Prep Ingredients: Dice the Spam, chop veggies if using fresh, beat the eggs, and be sure you start with cold day-old rice for the best texture. If you only have freshly cooked rice, spread it out on a tray and chill it to reduce moisture before using it; this helps it fry up fluffy instead of sticky.
  • Cook the Spam: Heat a large wok or skillet over medium-high heat, then cook the diced Spam until golden brown and crispy on the edges. Transfer to a plate and set aside.
  • Sauté the Aromatics and Veggies: In the same pan, add a little oil and sauté the onion until lightly caramelized and fragrant. Push it to the side, add mixed veggies, and stir-fry until just tender and bright in color.
  • Scramble the Eggs: Push the veggies to one side, pour in the beaten eggs, scramble until just set, then mix everything together in the pan.
  • Add the Rice: Add the cold rice right into the skillet, breaking up any clumps as you go. Stir fry until the rice is evenly combined with the veggies and egg mixture.
  • Season the Rice: Add oyster sauce, soy sauce, salt, pepper, sugar, and sesame oil. Stir everything until the rice is evenly coated with flavor. This base method also works perfectly if you ever want to make Hawaiian spam fried rice for sweet + savory fusion flavor.
