Simple ingredients

Cooking oil: I used two tablespoons of oil to brown the steak and the rest of the oil for deep frying the egg rolls. 

Fine cubed steak or chopped shaved steak: They are the primary protein source for the egg roll filling. It is worth mentioning that the reason why you need to chop/shave the steak is because it enhances the texture and ensures even cooking.

Sweet onion: It adds sweetness and flavor to the filling. You can also use yellow onion.

Medium-sized green and red bell peppers:  they are the " must-have" ingredients that provide a colorful and flavorful addition to the filling.

Light soy sauce: It adds saltiness and umami flavor to the filling.

Provolone cheese slices: Provolone cheese adds a creamy and cheesy element to the filling. Monterey Jack or American cheese works wonderfully too.

Egg roll wrappers: Egg roll wrappers keep everything together during cooking. You can get them from Asian markets or local grocery stores. 

Water for sealing the egg rolls: Used as a sealant for the egg roll wrappers. 

Cooking process

Gather all the ingredients and dice the sweet onion and green and red bell peppers. Cube the steak into small pieces. Cut the provolone cheese slices in half.

Prepare the Philly cheesesteak filling:

Heat oil in a large skillet over medium-high heat; sauté cubed steak until tender. Add the light soy sauce, salt, and pepper to taste. Set aside.

In another large skillet or a frying pan, add diced sweet onions and cubes of green and red bell pepper to the skillet. Sauté until the vegetables are softened. Season the mixture with salt and pepper to taste. 

Combine the cooked steak pieces and sautéed peppers, and stir fry for 10 seconds so the flavors meld together. Turn off the heat and set aside.

Assemble the egg rolls:

Lay an egg roll wrapper on a flat work surface with one corner pointing towards you.

Place a half slice of provolone cheese on top of the filling.

Fold the bottom corner over the filling, then fold the side corners toward the center.

Roll the wrapper tightly from the bottom up, sealing the top corner with a little water.

Heat cooking oil in a large wok or deep fryer to 350°F. Fry egg rolls until golden brown, about 3-4 minutes, then drain on paper towels.

For Air Frying: Preheat the air fryer to 375°F. Place egg rolls in a single layer in the air fryer basket, lightly spray with cooking oil, and cook for 5-10 minutes or until golden brown and crispy.

Serve

Place the crispy Philly cheesesteak egg rolls on a wire rack to maintain their crunch. Serve with sweet chili sauce or your favorite dipping sauce. Enjoy!
