Ingredients

  • 2 cups mashed banana about four ripe bananas, plus extra for topping
  • 2 eggs
  • 1/3 cup raw honey or pure maple syrup
  • 1 cup cake flour
  • 2 teaspoons of baking powder

Instructions

  • Preheat the oven to 350°F (180°C). Use foil or parchment to line a 9x5-inch loaf pan and spray it with non-stick cooking spray.
  • In a large bowl, mash the bananas with a fork until they are entirely mashed first. Then blend all the ingredients until smooth.
  • Slowly pour the banana bread batter into the prepared loaf pan. I gently lay half a banana on top of the batter for extra banana flavor. This is optional.
  • Cook for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  • Let it cool completely before slicing. Enjoy!
