In a large mixing bowl, use a stand mixer ( or an electric mixer) to cream together the dry ingredients and the wet ingredients until just combined. Be cautious not to overmix.
Mix in the lemon zest and vanilla extract (optional) until well combined.
Gently fold in the fresh blueberries, making sure an even distribution without crushing them.
Using a large cookie scoop or a spoon, portion the dough into balls and place them on a parchment paper-lined large baking sheet, leaving enough space between each. You can take a fork and press down gently on each cookie dough portion. You can press down once to create thicker cookies or press down twice to create thinner cookies.
