Heat the cooking pan with olive oil and butter on medium-high heat until the butter has melted.
Pour in the washed and sliced baby Bella mushrooms and brown them for about four or five minutes. Then add minced garlic to the mushroom and continue to stir fry for about 1 minute.
Add basmati rice to the stir-fry mixture. Give it a quick stir for about 1 minute.
Then pour in the vegetable broth, and let it simmer for about 10 minutes on medium-low heat, add a pinch of soy sauce at about the 8-minute time mark. The rice mixture should soak up all the liquid.
Toss in the green onion to garnish, and salt and pepper to taste. Turn off the heat and enjoy!
