What is Mushroom Rice?
Mushroom rice is a delicious rice dish that includes thinly sliced mushrooms, basmati rice, and other ingredients. It's delicious and easy to make at home. It's good for people who are looking for something light yet filling. Although this dish is often served as an appetizer in Chinese restaurants, it can also be served as a main meal.
Ingredients
The ingredients for mushroom rice include:
Mushroom: You can make mushroom rice with any kind of mushrooms like button mushrooms, fresh shiitake mushrooms, or portobello mushrooms. This recipe uses baby Bela mushrooms for making mushroom rice. The mushrooms must be cleaned and sliced before they are added to the skillet or wok.
Onions and garlic: They are all common ingredients in Chinese cooking. These three spices add incredible flavor to the dish, making it one of my favorites!
Olive oil and unsalted butter: I use them both to brown the baby Bella mushroom before adding the rice.
Rice: I use basmati rice for this recipe. They generally have a lower glycemic index than white rice, and I have always enjoyed using them in rice dishes. You can use any type of long-grain white rice.
Vegetable stock: This ingredient is used to add extra flavor to the rice. You can also substitute chicken broth or beef broth if you want.
Pinch of soy sauce: this is optional; I added a little bit.
How to Make Mushroom Rice
Heat the cooking pan with olive oil and butter on medium-high heat until the butter has melted. Pour in the washed and sliced baby Bella mushrooms and brown them for about 4 or 5 minutes. Then add minced garlic to the mushroom and continue to stir fry for about 1 minute.
Add basmati rice to the stir-fry mixture. Give it a quick stir for about 1 minute. Then pour in the vegetable broth, and let it simmer for about 10 minutes on medium-low heat, add a pinch of soy sauce at about the 8-minute time mark.
The rice mixture should soak up all the liquid. Toss in the green onion to garnish, and salt and pepper to taste. Turn off the heat and enjoy!
This recipe is vegan and gluten-free, so it can be enjoyed by everyone. You can also use this mushroom rice as stuffing for tacos or burritos!
Store and Reheat
Mushroom rice will only stay fresh for a few days. To store it, cover it and refrigerate it for up to 2 days. Place it into a Ziplock bag to freeze.
Reheating a bowl of mushroom rice that has been stored in the refrigerator is easy using the microwave or stove. If you're reheating in the microwave, bring the prepared rice to room temperature first before nuking it. If you're reheating on the stove, heat over medium-low heat until warm.
