The finished chicken sticks go well with sweet and sour dipping sauce or alone. When cooking Chinese chicken on a stick, you may want to sprinkle some roasted sesame seeds onto it before serving it so that it tastes more delicious!

Chicken: I used boneless skinless chicken breasts in this recipe. I think chicken breast is the best cut for this recipe because white meat is healthier, leaner, and more tender. Feel free to use your favorite meat parts, such as boneless skinless chicken thighs or dark meat.

Ginger: I love ginger! I added two slices of fresh ginger to this recipe for an extra kick of flavor. You can substitute it with ginger powder if you don't have fresh ginger. I do notice the difference between with or without ginger. So, if you are not a fan of ginger, you can go ahead and skip it.

Marinade sauces: The marinade sauce for this recipe contains light soy sauce, honey, brown sugar, Zhenjiang vinegar(or rice vinegar), ginger slice, garlic powder, and sesame oil. This combination gives the chicken a fantastic umami flavor, which makes these Chinese skewers irresistible!

Add salt and black pepper, depending on your taste.

Step-by-step instruction

Start by cubing the chicken breasts (or thighs) into bite-sized pieces. Set aside.

In a large bowl, combine the soy sauce, honey, brown sugar, Zhenjiang vinegar, ginger slice, garlic powder, and sesame oil. Mix well. Transfer the chicken cubes and the marinated sauce to a zip-loc bag. Set the marinating bag in the refrigerator for at least 1 hour or overnight. Set a plate or container under the bag to prevent the sauce from leaking.

Meanwhile, let the bamboo skewers soak for 30 minutes in cold water.

Put the marinated chicken cubes on the sticks and thread them.

Preheat oven to 400F degree. Place the chicken skewers on a baking sheet and cook for 15 minutes or until cooked. (More or less depending on the amount of the chicken) At the halfway point, turn the chicken over so both sides get cooked. Make sure the cooked chicken pieces reach an internal temperature of 165 degrees.

Garnish with roasted sesame seeds. Serve and enjoy!

Tips for making the perfect Chinese chicken on a stick

  • Please make sure the chicken is cut into even pieces so it cooks evenly and quickly.
  • Marinate the chicken in mixed sauces very well before cooking to absorb all the flavors from these ingredients, and you will get the best result.
  • Use bamboo skewers as they are safer than metal skewers because there is less chance of burning yourself on them!

Can you use an air fryer or grill?

Ai fryer: Air fry them at 400F/200C for 5 minutes, turn them over, and air fry for another 5 minutes or until they are cooked.

Grill: When cooking on a BBQ charcoal or gas grill, turn the chicken every 2-3 minutes. Keep the heat low, so the sticky marinade does not burn before the chicken is cooked for 10-15 minutes. You may need to cook for longer or shorter periods depending on the type of grill or grill pan you use.

On the stove: Turn the stove to medium-high heat, brush the griddle or skillet with oil, and put the chicken skewers on. Cook until chicken pieces turn golden brown, about 3 minutes per side. I don't personally recommend the stove method. I found it less convenient than other methods, especially if you have more chicken skewers.

Store and reheat

Remove the chicken from the sticks and store the chicken in an airtight container in the fridge for up to three days. You can also freeze it, which lasts for a couple of months. Whenever you are ready to eat again, thaw it by setting it in the fridge and heating it in the air fryer or microwave until it reaches your desired temperature.

  • ½ cup light soy sauce
  • ¼ cup raw honey
  • 1 tablespoon brown sugar
  • 1 tablespoon Zhenjiang vinegar
  • 2 slices fresh ginger
  • ½ teaspoon garlic powder
  • 1 teaspoon sesame oil optional
  • salt and black pepper to taste
  • roasted sesame seeds for garnish

Instructions

  • Cube the chicken breasts (or thighs) into bite-sized pieces. Set aside.
