Hot pot! Have you ever tried it? Although Chinese restaurants offer hotpots, you can enjoy the experience at home. A perfect hotpot includes a few essential components. Here is a detailed discussion on all of these. A hot pot is perfect for a group of people to meet to cook food together.
Equipment of Hot Pot
A hot pot is a Chinese cooking vessel used to cook food; it is a type of stew. It is made by simmering the ingredients in a hot liquid in a pot of broth or seasoning broth. The ingredients are usually cooked at a low simmer to allow the flavors to infuse into the liquid.
The first thing you notice when enjoying a Chinese hotpot is the equipment. Some of the restaurants offer high-tech and inbuilt stoves and more. It is simply a big pot of bubbling broth sitting at the center of the table. Here are several trays, serving plates, and dishes loaded with meat, veggies, and sides that are essential for a hot pot. If you are trying it at home, you can simply use a single burner stove or an instant pot as well.
Sometimes you will find a class hot pot made by a divider in the middle, which lets you put out two different flavors and offer more options to your family!
Broths
The broth is probably the most important component of a hot pot. It sets the base of the rest of the ingredients. A rich and tasteful simmering broth in the center of the table connects the ingredients. You can either use store-bought broth or make your own using bones, vegetables, and seasonings. To cook the hot pot, simply bring the broth to a simmer and then let everyone add their ingredients to cook as desired. Now there are different types of broths used for a hotpot. Here is how you can customize them:
- Base: set the base for the broth. You can use either pork, beef, chicken, or even seafood. Traditionally a broth is cooked for hours to produce the best flavors. If you're using a clear broth, you'll want to add some seasoning to give it flavor. Common seasonings include ginger, garlic, leeks, and green onions.
- Roots and herbs: you can also make a clear broth for the hotpot. It is mildly spiced. The main flavors are extracted from ginger, scallions, mushrooms, and tomatoes.
- Spices: if you want the broth to have heat and punch of flavor, you must make a Sichuan-style hotpot broth. It is made using chilies, aromatics, and Sichuan peppercorns. It has a red color and is quite spicy and very flavorsome.
Ingredients of Hot Pot
Here is a list of ingredients:
- Meat: You can use chicken, beef, pork, or lamb meat for your protein. The meat must be premium quality and have enough fat to get the flavor. The meat is thinly sliced so that it can be cooked quickly in the broth. You can use meatballs as well (beef tendon ball, fish ball); they are my favorite hot pot ingredient.
- Seafood: Boneless fish filets, prawns, and squid are widely loved ingredients. Baked fish cake and fried fish cake are excellent options as well.
- Tofu: Another great option is tofu. Cubed tofu works well in a hot pot and is a great source of protein. You can add any sauces or spices you like or simply enjoy it plain. Sliced, dehydrated, or fermented, you can use tofu in any form. Tofu is a must-have ingredient for hot pot!
- Vegetables: When it comes to hot pot, the sky's the limit when it comes to what veggies you can put in. You are free to choose whatever vegetables you love or have on hand. You can go with traditional favorites like Chinese leafy greens, carrots, lotus roots, and mushrooms, or get more creative with things like asparagus, bok choy, or watercress. Just be sure to pack your pot with plenty of healthy options to make your meal complete. Don’t forget to cut them into bite-sized pieces so that they cook quickly in the broth.
- Noodles: Most people love noodles and dumplings in their hotpot. You can use glass noodles, rice noodles, instant ramen, wontons, or dumplings. Be creative, you can even use rice cake in a hot pot. If you buy the premade ones, remember to soak them for a good amount of time before cooking.
Sauces
The flavor of the broth is one thing, but you will need a few sauces to add more flavor to dip the cooked food. You can use sesame paste (the most used sauce for hot pot), Shacha sauce, (Chinese BBQ sauce) rice vinegar, oyster sauce, soy sauce, sesame oil, chili oil (Lao Gan Ma brand is a well-known chili sauce), among other sauces.
The next time you plan to make a hotpot at home, make sure you are prepared to do so.
Premade Hot Pot Soup Base
There are two premium brands called “HI” and "Little Sheep”. You can find them at all major Asian grocery stores or order them from Amazon.
Below you will find four types of premade soup base paste mix. They are well-known hot pot brands for homemade hot pots. Some popular types of soup bases include mushroom flavor seasoning, hand-made hot pot seasoning, spicy sauce for stir-fry flavor, and beef tallow hot pot sauce.
All of them offer a variety of flavors, so be sure to experiment until you find one you like.
